Cinnamon Buns

Cinnamon Buns


 Hi, I don't know about you guys,but whenever it's a cold windy day I start to crave cinnamon buns. My favorite thing about cinnamon buns is that they are sweet and delicious and you can have them for breakfast or as a  snack. Here's the recipe!   Makes about three dozen.
     
        Dough:                                                          Utensils:
        5 1/2-6 1/2 cups flour                                     oven
        1/2 cup sugar                                                stand mixer
        1 1/4 tsp salt                                                 rolling pin
        2 packages yeast-quick rise                           glass measuring cup
        2 cups milk                                                   measuring spoons
        2/3 cup butter                                                large bowl
        3 eggs-room temperature                                plastic wrap
                                                                            parchment paper
       Topping:                                                         microwave
       3/4 cup melted butter                                      instant read thermometer
       1 1/2 cup brown sugar                                     cookie-sheet
       3 tablespoons cinnamon




Steps:
       1.   In bowl of stand mixer combine two cups flour, sugar, salt and yeast.
       2.   In glass measuring cup heat milk and  butter in microwave to 130 degrees.
       3.   Turn mixer on low and add warm liquids into flour mixture.  



       4.   Beat in eggs one at a time scraping the sides of the bowl once in a while.

       5.   Continue adding enough flour ( approximately  4 1/2-5 1/2 cups flour)to make a soft dough.

       6.   Turn out onto lightly floured board, knead until smooth and elastic about 8-10 minutes.



       7.   Place in greased bowl and cover with plastic wrap and let rest 15 minutes or so .

       8.   Divide dough into 3 equal pieces.

       9.   Roll first dough piece into a 10 X 12 rectangle .

      10.  For topping, combine brown sugar and cinnamon .

      11.  Brush first rectangle with 1/4 cup melted butter and sprinkle approximately with 1/2 cup topping.



      12.  Starting at long edge roll the dough into a log shape and pinch edges to seal.
      13. Cut dough log into 1 inch wide slices.



      14.  Lay flat on a cookie sheet covered in parchment paper.
      15.  Repeat from step 9 with the two remaining balls of dough.
      16.  Cover cinnamon buns with plastic wrap and let them sit until doubled in size.

      17.  Now you preheat the oven to 300.
      18.  Bake each pan for 15-20 depending on your oven.
      19.  When cinnamon bun are done backing, drizzle with your favourite icing

      20.  Finally serve with a cold glass of milk and enjoy!


 Okay I admit maybe this is not the easiest recipe out there but it sure tastes good.It is also a great dish for  company. Either way cinnamon buns are great to make and I hope you  enjoy this dish as much as I do.

cheesy nachos

A few weeks ago I was wanting a snack . Except  I didn't know what to get soo I decided that I should make my favourite , cheesy nacho's .

                                                                what you need
                                             
                                                orange cheese
                                                and nacho chips
                                                you can also put on onions,bacon, or dip it in salsa.

get out a pan and put parchment paper on the pan . now put as many nachos as you want on the pan , then shred cheese and put cheese on the nachos  and/or any other toppings. put pan in oven at 375 until cheese melts

s'more cupcakes

yesterday I made s'more cupcakes. I got the recipe from a book .They tasted amazing ! They were chocolate cupcakes with marshmallow icing crushed gram cracker and a chocolate on top ! I served them to some friends that had come over for supper . They loved it . maybe next time I make thees I'll put marshmallows in the batter so that when you bite down you get a gooey surprise.I suggest you double the recipe for a bigger batch.

                                                    1 cup all purpose flour
                                                    3/4 cup granulated sugar
                                                    1/2 teaspoon baking soda
                                                     1/2 butter or margarine
                                                    1/3 cup milk
                                                    3 tablespoons unsweetened cocoa
                                                    1 egg lightly whisked
                                                    1/4 cup butter milk
                                                 
                                                    frosting
                                                    1/4 cup unsalted butter, softened
                                                    1 1/2 cups powdered sugar
                                                    17 oz. jar marshmallow cream
                                                     4 graham crackers
                                                    15 Hershey kisses

       preheat oven to 350 . line muffin tins with cupcake paper . in a large mixing bowl mix flour, sugar , and baking soda together with a whisk . in a sauce pan , melt the butter/margarine with the milk and the cocoa on low heat . when completely melted remove from heat . whisk egg in separate bowl and add to flour mixture, along with the melted butter/margarine mixture ,buttermilk and vanilla . beat with mixture on low until smooth
fill cupcake liners half full . bake for 18 -20 minutes . let cupcakes cool before frosting .


for frosting , beat soften butter , powdered sugar , and vanilla until smooth . add marshmallow cream and mix spread on cooled cupcakes with a knife . put graham crackers in a plastic bag with rolling pin set aside unwrap kisses and place in center of cupcake  sprinkle with graham crackers on top

makes about 15 cupcakes
